These sautéed collard greens with garlic are a delicious side dish that pair well with pasta or meat! To mix this up, you can add in red pepper flakes for a little spice,  ¼ vegetable/chicken broth for them to soak up extra flavor, and/or add in pinto beans for protein. This recipe makes 2 servings.

Ingredients:

  • 4 cups collard greens, chopped or 1 14 oz. can, drained
  • 2 garlic cloves, minced
  • 1 small onion, diced
  • 2 tsp oil
  • salt and pepper
  • 1 tsp lemon juice or vinegar

Steps:

  • Remove stems from the leaves and discard them. Chop greens into 1 inch strips that are a few inches long.
  • Heat a large skillet to medium, add oil, garlic and onion. Stirring frequent, cook garlic and onions until softened and fragrant. Add greens and stir just until all greens have turned bright green, usually about 5-7 minutes. *
  • Increase temperature to medium-hot and sautéed for 2-3 minutes or until greens are just tender.
  • Add lemon juice or vinegar. Season with salt & pepper. Serve hot.

*If using canned, add greens to cooked garlic and onions and proceed to step 3.
