One of the first fresh vegetables you’ll see popping up in Vermont during spring is fresh spinach. The hearty green is full of nutrients and is so versatile. This sautéed Spinach with garlic is delicious and quick to make. It pairs well with any protein as a side , can be mixed into eggs for breakfast, or stirred into any pasta dish. Picking up a bag of spinach is a great way to celebrate the new spring growth to come!

Ingredients:

  • 2 Heaping handfuls of spinach
  • 2 Tbsp olive oil
  • 2-3 Cloves garlic, minced
  • Salt and Pepper, to taste

Optional: 1 Tbsp Lemon juice

Optional: Crushed red pepper flakes

Main Ingredient(s): Garlic, Spinach

Steps:

  • Heat oil in large skillet.
  • Add garlic, and red pepper flakes if desired and cook until fragrant.
  • Add spinach and stir.
  • Cover and cook until slightly wilted.
  • Remove from heat and add salt, pepper and lemon juice.
